Cheesecake
- 1 3/4 c. graham cracker crumbs
- 1/3 c. butter
- 1/4 c. sugar
- 6 (8 oz.) pkg. cream cheese, softened
- 2 tsp. vanilla
- 4 c. sugar
- 6 eggs
- 1 (8 oz.) sour cream
- 1/4 tsp. lemon juice
- any 2 cans fruit pie filling
- Blend first two ingredients and 1/4 cup sugar. Press into bottom of a 9 x 13-inch baking pan.
- Beat cream cheese until fluffy.
- Gradually add 4 cups of sugar and vanilla.
- Beat in eggs, one at a time.
- Blend in sour cream and lemon juice.
- Spread in pan and bake in a 350u0b0 oven for about 60 minutes or until firm. Turn oven off and leave door slightly ajar while cake cools for 1 hour.
- Take out and let finish cooling.
- Chill in refrigerator overnight.
- Top with pie filling and enjoy!!
