Healthy Tuna
- 3 cans of albacore tuna in water, Star Kist. 1 12 oz. can and 2 cans 6 oz.
- head of broccoli, use flowers only, wash and steam( I put the carrots and broccoli in the fp together)
- 3 carrots, peeled and chopped in food processor.
- 1 large onion, chopped finely and sauteed to a carmel brown with olive oil
- 3 sticks of celery, chopped fine and remove all strings
- balsamic vinegar to taste
- Best Foods mayo to taste and to wetness
- salt and pepper to taste
- Begin my chopping the onion, sauteeing in a frying pan with olive oil. Wash and steam flowers of broccoli, peel, chop carrots into coins and use food processor to chop broccoli and carrots finely. Set aside.
- Cool onions. Chop and destring celery, chop finely
- Rinse and drain Albacore Tuna
- in water and put in large bowl.
- using fingers, break up any large pieces until tuna is finely broken up. Add sauteed brown onions, chopped celery, briefly steamed and chopped broccoli and chopped carrots. Add balsamic vinegar to taste, S and pepper to taste and Best Foods Mayo to taste and wetness. You will find not much mayo is needed and the balsamic vinegar gives the tuna a very elegant flavor while the broccoli, carrots, celery and onions add needed veggies to our diet. Even my kids love this!!
