Compost Cookies
- 1/2 cup softened butter
- 1/2 cup shortening
- 1/2 cup white granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon baking soda
- 2 large eggs
- 1 teaspoon vanilla
- 2 1/2 cups unbleached all-purpose flour
- 1/3 cup chunky peanut butter
- 1/2 cup crushed potato chips
- 1/4 cup crumbled sugar cookies
- 1/2 cup assorted chocolate chips (I had an open bag of semi-sweet and an open bag of white chocolate)
- Handful of Craisins
- 2 tablespoons rainbow sprinkles
- 1/2 cup chopped Samoa cookies
- Coarse Salt
- In a mixer, whip together butter and shortening.
- Mix in sugars and baking soda until combined.
- Mix in eggs and vanilla until combined.
- Stir in flour slowly, 1/2 cup at a time.
- Mix in peanut butter until completely combined.
- In a separate bowl, mix together everything else.
- Stir mixture into the dough.
- Chill dough for at least 1 hour.
- Preheat oven to 375 degrees.
- Roll medium sized dough balls and place them about 2 inches apart on a greased cookie sheet (or parchment paper).
- Sprinkle coarse salt on top of each dough ball.
- Bake for about 9 minutes.
- Let them cool for at least 2 minutes before serving.
