Compost Cookies

  1. In a mixer, whip together butter and shortening.
  2. Mix in sugars and baking soda until combined.
  3. Mix in eggs and vanilla until combined.
  4. Stir in flour slowly, 1/2 cup at a time.
  5. Mix in peanut butter until completely combined.
  6. In a separate bowl, mix together everything else.
  7. Stir mixture into the dough.
  8. Chill dough for at least 1 hour.
  9. Preheat oven to 375 degrees.
  10. Roll medium sized dough balls and place them about 2 inches apart on a greased cookie sheet (or parchment paper).
  11. Sprinkle coarse salt on top of each dough ball.
  12. Bake for about 9 minutes.
  13. Let them cool for at least 2 minutes before serving.
