Grilled Veggie Sandwiches
- Marinade:
- 4 T best olive oil
- 4 T white wine vinegar
- 1 tsp finely chopped herbs (thyme and basil work well)
- Pinch salt
- Ground pepper to taste
- Veggies:
- 1 red sweet pepper, cored and sliced thickly
- 1 yellow sweet pepper, cored and sliced thickly
- 1 green pepper, cored and sliced thickly
- 1/2 red onion, peeled and quartered
- 1/2 small courgette, sliced lengthwise
- 2 small fresh tomatoes, sliced
- Fresh greens, if desired.
- 4 oz. goat cheese
- French bread (round loaf works best)
- Olive oil, for brushing the sandwiches
- 1. Prepare the marinade by mixing the marinade ingredients, adjust salt and pepper to taste. Pour over the peppers, onions, and courgettes and marinate for 2 hours or overnight.
- 2. Heat oil the grates of grill and heat to medium/medium high.
- 3. Remove the vegetables from the mardinade, reserve the marinade.
- 4. Grill the peppers, onions, and courgettes until softened and charred, turning often.
- 5. Cut the bread into medium slices and spread with the goat cheese. Sprinkle with a small amount of reserved marinade.
- 6. Layer the tomatoes atop the goat cheese. Stack the grilled veggies atop the tomatoes. Close sandwich with another slice of bread.
- 7. Brush the sandwich with olive oil and grill until the bread is nicely toasted.
