Winter Soup

  1. heat oil over medium flame in a soup pot (not too large)
  2. sautee onion and add all the spices making sure not to burn them. To this add all the veg and the grated tomato. Cover with stock, and bring to the boil. Lower heat and simmer for about 1/2 hour.Add grushed garlic. Adjust flavour by adding salt and sugar and just before serving mash the veg and add the coriander
