Quinoa Avocado Spinach Salad
- 1 cup Dry Quinoa
- 2 Medium Avocados
- 3 ounce Baby spinach
- 8 ounce Cherry tomatoes
- 3 Green onions
- 2 Carrots, chopped
- 1/2 Red bell pepper, chopped
- 1 English cucumber, chopped
- 1/4 cup Cilantro, chopped
- 1/4 cup Fresh mint, chopped
- 2 Garlic cloves, minced
- 2 tablespoon Red wine vinegar
- 2 tablespoon Olive oil
- 1/2` teaspoon Salt
- Cook Quinoa in 2 cups vegetable broth according to package directions.
- In a small bowl, whisk together the garlic, vinegar, olive oil and salt.
- Roughly chop the spinach and place in large bowl.
- Slice the green onion, halve, the cherry tomatoes, dice the avocado.
- When quinoa is done cooking, add to the large bowl with the spinach and toss. Spinach will wilt.
- Add remaining ingredients including dressing (except avocado). Toss lightly and refrigerate. Add avocado just before serving.
