Cheese Filled Minature Strudels

  1. Saute onions in 3 tablespoons butter in a large skillet over medium heat, stirring frequently, until onions are soft and golden but not brown, about 20 minutes. Cool to luke warm.
  2. Combine onion mixture, cream cheese, swiss cheese, caraway seeds and salt in medium bowl, stir to mix well.
  3. Unroll fillo leaves, cover with damp towel. Brush one side of 4 of the fillo leaves lightly with part of the melted butter, stack 4 sheets on top of each other. Spoon one fourth of the cheese mixture along one short side of the leaves, making a strip of filling about 1 inch wide. Roll up fillo tightly to enclose filling, tuck ends under. Score top roll cross wise with sharp knife, making cuts about 1/4 inch deep and 1 inch apart. Brush with butter. Repeat with remaining fillo and filling to make a total of 4 rolls.
  4. Wrap each roll in plastic wrap, seal ends. Freeze up to 3 months.
  5. To serve heat oven to 400 degrees. Bake on ungreased baking sheets until golden brown 15 to 20 minutes. Cut into serving pieces along the markings.
