French Vidalia Onion
- 1 medium to large vidalia onion
- 1 beef bullion cube
- 1/2 cup of water
- 1/2 to 1 tbsp of grated parmesan cheese (optional)
- 1) Peel and clean on vidalia onion
- 2) Core the center of the onion, enough to create a hole, but not to allow the onion to fall apart
- 3) Create shallow vertical slices in the onion (about 1 inch apart. This allows the onion to open like a flower when it is done cooking.)
- 4)Place the bullion cube in the center of the onion.
- 5) Place the onion in a pouch of alluminum foil. Make the pouch of sufficient size to contain the onion and the juices that will result.
- 6) Pour 1/2 cup of water over the onion.
- 7) Close the pouch and place on the grill over medium heat.
- 8) Cook for approximately 45 minutes to 1 hour. Grill temperatures may vary, so be sure to check the consistency of the onion half-way through the cooking time.
- 9) Remove onion from grill. Take contents of pouch and place in a bowl or on a plate.
- 10) Sprinkle parmesan over the top of the onion.
