Italian Style Mince Bake
- 2 lb extra lean ground beef
- 1 tablespoon oil
- 14 oz chopped tomatoes
- 1 pint beef stock
- 1 pack salad onions, chopped
- 1 green pepper, cored and de-seeded, cut into 1 inch strips
- 1 red pepper, cored and de-seeded, cut into 1 inch strips
- 6 baby zucchini, cut into strips
- 1 tablespoon tomato puree
- 3 tablespoons freshly chopped basil
- Salt and freshly ground black pepper
- 2 oz fresh breadcrumbs
- 4 oz grated mozzarella cheese
- 1.teat the oil, add the mince and cook for 10 minutes or until browned.
- 2.tdd the tomatoes, stock, onions, peppers, zucchini's, tomato puree, 2 tablespoons of basil and seasoning, and simmer for 5 minutes.
- 3.transfer to an ovenproof dish and sprinkle over the breadcrumbs, cheese and remaining basil. Place in a preheated oven 200u0b0 400u0b0F, Gas MarK 6 for 20-25 minutes until golden.
