Chicken Tortilla Soup
- Tortilla Soup:
- Boil one whole chicken, debone and reserve broth
- 2-3 cans of chicken stock
- 2 cans of Rotel tomatoes with green chilies
- 2 cloves of Garlic (2-3 tsp of minced)
- Half of a large onion chopped
- 1.5 TBSP of chili powder OR 3 tsp of adobo
- sauce/seasoning (contains peanut products)
- 1 TBSP of cumin
- 1 TBSP of fajita seasoning
- add black pepper and cayenne as desired to taste
- 1-2 cups of instant rice
- Garnishes:
- Cilantro- add about a handful of chopped to the soup
- and chop the rest for people to add as they wish
- Shredded Colby Jack Cheese
- Sliced avocados
- fried strips of corn tortillas OR corn chips
- Combine all ingredients in a stock pot and cook over
- medium heat for about 20 min or until onion is
- translucent. Add rice and let cook covered for 10 min.
