All-Season Shortcake
- 3 egg whites
- 3/4 c. sugar
- 1 tsp. grated orange peel
- 1/2 tsp. vanilla
- 1/2 c. skim milk
- 1 Tbsp. margarine
- 1 c. flour
- 1 tsp. baking powder
- 1/4 tsp. lite salt
- 1/4 tsp. ground nutmeg
- 6 c. fresh fruit, sliced (such as strawberries, peaches, kiwi, mango)
- 1/2 c. sugar
- 3 c. low-fat whipped topping
- Cut a piece of waxed paper to fit the bottom of a 9-inch square baking pan.
- Lightly oil pan sides and paper.
- Preheat oven to 350u0b0.
- With a mixer, beat together egg whites, sugar, orange peel and vanilla until light and fluffy.
- In a small saucepan, heat the milk and margarine until hot, then stir into the egg mixture.
- In a bowl, stir together the flour, baking powder, salt and nutmeg.
- Add to the batter and stir to blend well.
- Pour batter into prepared pan.
