Spiced-Up, Oven Fried Chicken
- 4 cups crushed plain cornflakes (from 8 cups whole cornflakes)
- 1 Tbs smoked paprika, to taste
- 2.5 tsp salt
- 1 tsp black pepper
- 3 eggs
- 1/2 c milk
- 3 chickens (3 to 3.5 lbs each), cut into 8 pieces each - I just use boneless breasts or whatever I have in the freezer
- 2 Tbs fresh parsley for garnish
- 1. Preheat oven to 350. Line 2 baking sheet with aluminum foil or spray with non-stick cooking spray
- 2. Combine crushed cornflakes in large bowl with paprika, salt, and pepper.
- 3. Lightly beat eggs with milk in a bowl.
- 4. Dip chicken in egg mixture, shake off excess, then into crumbs, coating well. Place on baking sheets, leaving space between pieces.
- 5. Bake, in batches, for 1 hour or until golden brown and cooked through.
- 6. To serve, arrange chicken on large tray and sprinkle with parsley
