Cranberry Bran Muffins
- 1 1/2 cups unprocessed wheat or oat bran
- 1 C whole wheat flour
- 2 T ground flaxseed (optional)
- 1 1/4 tsp. Baking Soda
- 1 tsp. ground cinnamon
- 1/8 tsp. salt
- 3/4 C 1% or soy milk (try chocolate for a twist!)
- 1/3 C honey, brown rice syrup or maple syrup
- 1 ripe mashed banana
- 1 large egg OR 1/3 C unsweatened applesauce
- 2 Tbsp. olive oil
- 2 tsp. Vanilla
- 1 C halved cranberries or other berry.
- OPTIONAL- Dark chocolate chips or flakes
- In medium bowl combine bran, lfour, flax, baking soda, cinnamon, and salt and set aside.
- In another bowl combine milk, honey, banana, egg, oil, and vanilla until smooth.
- Make a well in the dry ingredients and pour in 1/3 of the liquid mixture. Using a spoone, stir until smooth. Add remaining liquid and stir just to combined. Add berries and stir again but do not overmix. Batter is quite lumpy.
- Will make 12 mini muffins. OPTIONAL- drop some dark chocolate chips or flakes onto the top of the muffins and press down slightly.
