Ruz And Yukhnee
- 2-3 large onions, chopped
- 1/2 cup butter
- 1 1/2 lb ground beef or turkey
- 1 tsp. salt
- 1/2 tsp. each pepper & cinnamon
- 1/4 tsp. allspice, optional
- 3 cups water
- 1 6 oz can tomato paste, or 1 10 oz can tomato puree
- 2 cloves garlic, mashed
- 2 Tbsp. lemon juice
- 1 can green beans
- 1 can green peas
- Cooked Rice:
- 2 cup Uncle Ben's Rice
- 3/4 cup vermicelli, broken into pieces *
- 1/4 cup butter
- 4 cups water
- 1 Tbsp. salt
- 1.Saute onions, meat and spices in the butter until browned. Mix tomato paste, water, garlic, and lemon juice. Simmer until meat is tender. Add green bean and peas. Heat for 15 min. Serve over cooked rice.
- 2.Cooked Rice:
- 3.In deep pan, brown vermicelli (or rice) in butter, stirring often. Add remaining rice, salt, and water. Stir. Cover and cook until rice is done about 20 min.
- 4.Note: if using a rice cooker. In a skillet brown vermicelli or 1/2 cup rice in butter. Transfer to rice cooker. Add the remaining rice and water. Start rice cooker.
- 5.*(or take out 1/2 cup Uncle Ben's Rice and brown it in the butter)
