Apple And Date Cake
- 1/2 lb cooking apples
- 1/4 lb stoned dates
- 3oz brown sugar
- 3oz butter
- 1/4 lb golden syrup
- 6 ozs flour
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Peel, quarter & core apples and cut into small pieces. put into pan with little of sugar and sufficient water to keep them from browning and cook until tender.
- Mash and leave to cool.
- Put butter in pan with the rest of the sugar, add syrup and let dissolve. Leave to cool.
- Sift flour into basin, add ginger and cloves.
- Beat eggs, add dissolved syrup and butter and whisk together. Add this to flour, then add apple puree and dates cut into small pieces. Beat for a few minutes, then turn into greased tin. Bake in moderate oven 1/2 hour
