Spinach And Rice Casserole

  1. Preheat oven to 350u0b0.
  2. Defrost spinach.
  3. Saute onions and mushrooms in oil.
  4. Combine with flour, cottage cheese, egg whites, egg substitute, uncooked spinach, cooked rice and seasonings.
  5. Pat into a shallow 9 x 12-inch baking dish and top with sesame seed and Parmesan cheese.
  6. Bake for 40 to 50 minutes until bubbling hot.
  7. Makes 8 servings.
