Spinach And Rice Casserole
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/2 c. chopped onion
- 1/4 c. sliced mushrooms
- 1 Tbsp. oil
- 3 Tbsp. wheat or white flour
- 2 c. low-fat cottage cheese
- 2 egg whites
- 1/4 c. egg substitute
- 3 c. cooked brown or white rice
- 1/4 tsp. pepper
- 1/2 tsp. thyme
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1 Tbsp. sesame seed
- 1 Tbsp. grated Parmesan cheese
- Preheat oven to 350u0b0.
- Defrost spinach.
- Saute onions and mushrooms in oil.
- Combine with flour, cottage cheese, egg whites, egg substitute, uncooked spinach, cooked rice and seasonings.
- Pat into a shallow 9 x 12-inch baking dish and top with sesame seed and Parmesan cheese.
- Bake for 40 to 50 minutes until bubbling hot.
- Makes 8 servings.
