*Bustan Tava (Ghiuveci)(Vegetable Casserole)

  1. Place in a large pan (larger than 9 x 13-inch) the onions, eggplant, peppers, string beans, garlic, zucchini and okra. Sprinkle with 1/2 cup olive oil over all.
  2. Toss lightly so vegetables are covered with oil.
  3. Pour the tomatoes and tomato sauce over the vegetables. Add the black pepper, salt, paprika and dried
  4. parsley. Toss again, lightly.
  5. Drizzle 1/4 cup olive oil on top.
  6. Bake at 400u0b0 about 1 1/4 hours or until all liquid is gone except for traces of the oil.
  7. Bake, uncovered.
  8. Halfway through baking, gently turn vegetables over with large spatula.
