Smoked Salmon Bombe

  1. Combine :
  2. cream cheese
  3. herbs
  4. lemon and lime juice
  5. 35%
  6. salt/pepper
  7. Blend until smooth in food processor.
  8. Lay thin slices of smoked salmon flat on a piece of saran slighlty overlapping to form a circle
  9. Place the cream cheese in the middle of the smoked salmon
  10. Pull edges of saran towards one another and form a ball with the salmon
  11. Twist the saran tight to help form the ball.
  12. Put in refrigerator for 1 hour to set
  13. To serve, unwrap salmon and place on a bed of shredded Bermuda onions, capers and cucumbers drizzled with rice wine vinegar.
  14. Garnish with Chive flowers and pumpernickle points.
