Oatmeal Shortbread Cookies

  1. Cream butter with white and brown sugars until light. Beat in egg and extracts.
  2. Stir together flour with salt and baking soda. Stir into batter just until blended. Stir in oats and nuts.
  3. Using about 1 tablespoon dough for each cookie, place balls on buttered or parchment-lined cookie sheet. Press cookies flat with fork or bottom of glass dipped in flour.
  4. Bake 8 - 10 minutes in preheated 350 degree oven. Cookies should be thin and crisp.
  5. Cool on racks
