Oatmeal Shortbread Cookies
- 1 cup unsalted butter
- 1/2 cup white sugar
- 3/4 cup light brown sugar
- 1 egg
- 1/2 tsp. pure vanilla extract
- 1/4 tsp. pure almond extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp. salt
- 1 tsp.baking soda
- 2 cups uncooked rolled oats
- 1/2 cup finely chopped walnuts
- Cream butter with white and brown sugars until light. Beat in egg and extracts.
- Stir together flour with salt and baking soda. Stir into batter just until blended. Stir in oats and nuts.
- Using about 1 tablespoon dough for each cookie, place balls on buttered or parchment-lined cookie sheet. Press cookies flat with fork or bottom of glass dipped in flour.
- Bake 8 - 10 minutes in preheated 350 degree oven. Cookies should be thin and crisp.
- Cool on racks
