Chicken Marbella
- 5 pounds chicken pieces, legs and thighs best
- 6 cloves garlic
- 1 T dried oregano
- 2 tsp pepper
- 2 tsp salt
- 1/4 c red wine vinegar
- 1/4 c olive oil
- 1/4 c Spanish green olives, pitted and whole
- 1/4 c capers with a bit of juice
- 1/2 c pitted prunes, chopped small
- 1/2 c dried figs or dates, chopped
- 1/2 c brown sugar
- 3 bay leaves
- 1 c white wine
- 2 T parsley, chopped, for garnish
- Combine all ingredients except parsely in a large shallow baking dish. Marinate overnight, turning occasionally. Bake at 350 F for 50 minutes, basting occasionally. When done it should be a deep golden color. Sprinkle with parsley.
