Sanibel Cafe'S Blueberry Streusel Muffins
- 1/3 C sugar
- 1/4 C butter (softened)
- 1 egg
- 2 C all-purpose flour
- 1 T plus 1 tsp baking powder
- 1/2 salt
- 1 C milk
- 1 tsp vanilla
- 1 1/2 C blueberries
- Streusel topping:
- 1/2 C sugar
- 1/3 C all-purpose flour
- 1/2 tsp cinnamon
- 1/4 C butter, softened
- cut butter into combined dry ingred until resembles crumbs
- Combine sugar and butter, cream ntil light and fluffy. Add egg, beating well. Combine flour, b. powder and salt; add to creamed mixture alternately with milk, stirring well after each addition. Stir in vanilla and then fold in blueberries. Spoon into muffin cups, filling 2/3 full. Sprinkel streusel on top. Bake at 375 degrees for 25-30 minutes or until golden brown.
