Sanibel Cafe'S Blueberry Streusel Muffins

  1. Combine sugar and butter, cream ntil light and fluffy. Add egg, beating well. Combine flour, b. powder and salt; add to creamed mixture alternately with milk, stirring well after each addition. Stir in vanilla and then fold in blueberries. Spoon into muffin cups, filling 2/3 full. Sprinkel streusel on top. Bake at 375 degrees for 25-30 minutes or until golden brown.
