Chicken And Corn Chili
- olive oil
- 1 large Spanish Onion, coarsely chopped
- 1 Green bell pepper, cored, seeded and chopped
- 6 plum tomatoes, peeled, cored and chopped
- 2 garlic cloves finely chopped
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 2 teaspoons ground cumin
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon coarse salt
- 1/2 teaspoon ground black pepper
- 12 boneless, skinless chicken thighs, cut into half inch pieces
- 3 cups chicken stock
- 3 cups frozen corn
- heat oil saute onion, pepper, tomatoes, garlic. stir in chili powder, cumin, oregano, red pepper, salt, black pepper. add chicken and cook for 5 minutes, pour in stock and bring to a boil, reduce het to low, cover, cook for 30 minutes, add corn and simmer for 10 minutes. Add more seasoning if necessary
