Lonza And Fig Salad

  1. Make the vinaigerette
  2. Roasted shallot in oven for 10 mins or untill soft.
  3. In a food processor place shallot, cider vinager, and turn on low add olive oil and honey and emulsify add salt and peper to taste.
  4. Take granny smith apple core and peel the cut in to a small dice add to vinaigerette
  5. set aside.
  6. For the salad
  7. In a bowl add arugula and drizzle with vinaigerette toss well on four salad plate place equal amonts of arugula then add lonza figs, pine nuts and cheese.
