Vegetable Rice Casserole
- 2 tsp. vegetable oil
- 2 medium green peppers, cut into strips
- 1 c. chopped onion, divided
- 2 c. chopped cauliflower
- 2 c. chopped broccoli
- 2 cloves garlic, chopped
- 1/2 tsp. dried whole thyme
- 1 Tbsp. chicken flavored bouillon granules
- 3 c. hot water
- 1 1/2 c. uncooked brown rice
- 3 Tbsp. reduced sodium soy sauce
- Place oil in large skillet; add green pepper, 1/2 cup chopped onion, cauliflower, broccoli and garlic.
- Cook on high for 5 minutes.
- Stir in thyme.
- Remove from heat.
- Dissolve bouillon granules in water in 2-quart casserole dish.
- Stir in rice, 1/2 cup chopped onion and soy sauce.
- Cover and bake at 350u0b0 for 20 minutes.
- Remove casserole from oven and stir in vegetable mixture..
- Cover, bake an additional 10 to 15 minutes or until all liquid is absorbed.
