Savory Spinach Souffle
- 1/3 c. shredded Parmesan cheese
- 3 Tbsp. sliced green onion
- 1/4 c. margarine or butter
- 1/4 c. flour
- 1 c. milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of nutmeg
- 4 eggs, separated
- 1 (15 oz.) can spinach, drained or 1 large bunch or bag fresh spinach
- Grease 1 1/2-quart souffle dish or casserole; coat with 2 tablespoons cheese.
- In saucepan, saute onion in margarine. Blend in flour.
- Add milk, salt, pepper and nutmeg.
- Cook, stirring constantly until thickened.
- Stir in remaining cheese. Add egg yolks, one at a time, beating after each addition.
- Blend in spinach.
- Cool.
- Beat egg whites until stiff but not dry.
- Fold into spinach mixture.
- Pour into prepared dish.
- Bake in 375u0b0 oven 35 minutes.
- Serve immediately.
