Carrot Cake With Maple Cream Cheese Icing
- CAKE
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 2 cups sugar
- 1 1/4 c canola oil
- 4 large eggs
- 3 cups grated peeled carrot
- 1 1/4 c coarsely chopped walnuts
- 2 Tbs minced peeled ginger
- ICING
- 10 oz cream cheese at room t
- 5 Tbs unsalted butter at room t
- 2 1/2 c powdered sugar
- 1/4 c maple syrup
- CAKE
- 350F. Butter 9x13" dish. Whisk flour, baking soda, salt and cinnamon to blend.Whisk sugar and oil in large bowl. Whisk in eggs 1 at a time. Add flour mixture and stir. Stir in carrots, walnuts and ginger. Bake cake until ready. Cool.
- ICING
- With electric mixer, beat cream cheese and butter. Add powdered sugar and beat well. Beat in maple syrup. Spread over the cake.
