Salmon And Vegetables In Parchment
- 4 medium fillets of salmon,
- 8 handfuls of fresh baby spinach,
- 2 cucumbers julienned,
- 1/2 cup dried cranberries or cherries,
- 1 chopped parsnip,
- 1/2 cup julienned carrots,
- Chateau St. Michelle Pinot Grigio,
- Fresh minced garlic,
- 1 quartered lemon,
- heavy cream,
- fresh parsley and thyme
- Special Item: parchment paper
- Fold the parchement paper like a cream cheese wrapper, rolling up the sides but keeping the top open.
- Place a salmon filet in each wrapper. Mix the vegetables and divide into each wrapper. Sprinkle each with a bit of fresh minced garlic and the juice of a quartered lemon. Top it with a dash of wine and herbs. sprinkle just a tiny bit of cream.
- Seal the top of the package and bake at 400 degrees until fish is cooked through, about 20 minutes in electric oven.
