Asian Beef Salad

  1. Using a fork, poke holes into steak to prepare for marinade sauce. Marinate the steak in the sesame ginger marinade at least one hour, overnight is better.
  2. Preheat grill to 350 degrees. Remove steak from marinade and cook on the grill approximately 45-60 minutes (depends on how thick the steak is) or until meat thermometer registers 140 degrees. Use the marinade to brush on the meat while cooking. Remove steak from grill. Discard marinade. Allow meat to rest for at least 10-15 minutes. Can be made ahead and refrigerated, covered, for up to 1 hour.
  3. Cook pasta according to package directions. Allow to cool to room temperature before using in salad. Can be refrigerated.
  4. Assemble cucmber, scallion and peanut condiments in separate bowls.
  5. Slice the steak in thin cuts across the grain.
  6. Plate pasta, slices of steak, cucumbers, scallions and peanuts. Top with the Asian dressing.
  7. Serve chilled or room temp.
  8. Asian Dressing:
  9. 3 tablespoons low sodium ginger flavored soy sauce
  10. 3 tablespoons cider vinegar
  11. 1 tablespoon sugar
  12. 1/2 inch piece of fresh ginger, peeled and chopped or 1/4 teaspoon ground ginger
  13. 1 clove garlic, chopped
  14. 1/3-1/2 cup smooth peanut butter
  15. 1/2 cup white wine
  16. 1 tablespoon sesame oil
  17. 1/2-1 teaspoon dried crushed red pepper
  18. In a blender, mix all dressing ingredients thouroughly. Adjust flavors as needed. Serve over Asian Beef Salad.
