Pam'S Mega Soup
- 2 c. okra, sliced
- 1 large tomato, cut into chunks
- 1 white onion, chopped
- 2 stalks celery, chopped
- 2 Tbsp. bacon drippings
- 1 can diced Ro-Tel
- 3 Tbsp. Worcestershire
- 3 qt. water
- 4 beef bouillon cubes
- 1 bag frozen mixed veggies
- 2 potatoes, peeled and diced
- 1 1/2 to 2 lb. ground beef
- salt and black pepper
- 1 tsp. garlic powder
- 1 Tbsp. Italian seasoning
- Saute first four ingredients in drippings until onion is clear.
- Add Ro-Tel, Worcestershire, water and bouillon.
- Bring to a boil; reduce heat and simmer.
- Add mixed veggies and potatoes. In separate skillet, brown meat.
- Drain fat.
- Season generously with salt and black pepper.
- Add garlic powder and Italian seasoning.
- Simmer a few minutes more.
- Add contents of skillet to soup.
- Simmer for 40 minutes to 1 hour.
- Great as is or serve with rice.
