Lemon Bars
- crust:
- 1&1/2 c. flour
- 2/3 c. 10x sugar
- 3/4 c. butter or margarine
- custard:
- 3 large eggs
- 1&1/2 c. granulated sugar
- 3 T. flour
- 1/3 c. lemon juice
- zest from 1 lemon (ideally microplaned zest)
- 1/4 t. baking powder
- Preheat oven to 350F for a glass dish or 375f for a metal pan. 13x9x2
- Whisk the flour and 10x sugar together. Use a pastry knife to cut the fat into the flour-sugar mix until well incorporated. You shouldn't see any globs of fat. Press into a 13x9x2 pan. Bake for 20 min or until just barely golden.
- While crust is baking, whisk the custard ingredients together except for the baking soda. When the crust is ready, whisk in the baking soda and pour the custard mixture over the hot crust. Bake for a further 20-25 minutes.
