Mediterranean Chicken
- 2 teaspoons lemon pepper
- 1/3 cup all-purpose flour
- 1 lb boneless skinless chicken breasts(4-4 oz pieces)
- -For Salsa-
- 4 medium scallions, chopped
- 3 tablespoons fresh lemon juice
- 1/8 teaspoon curry (just a pinch)
- 1/4 tsp dried oregano leaves
- 1/4 tsp thyme leaves
- 3 tablespoons fat-free Italian salad dressing
- 1/2 cup avocados, peeled and diced
- 1/2 can diced, tomatoes, drained & rinsed
- 1/4 cup sliced black Olives
- Preheat oven to 400 F degrees.
- Coat a baking dish with cooking spray. Combine lemon pepper seasoning & flour. Lightly coat chicken with cooking spray, then coat each breast with flour mixture. Place chicken in prepared dish & bake this until cooked through, about 20 mins.
- In a bowl, curry powder, herbs, lemon juice, mix scallions, avocado, tomatoes & olives and remaining ingredients.
- Place fresh romaine lettuce on tow plates. Divide chicken breasts between four plates & top this with avocado salsa.
