Skillet Chicken In Orange Sauce
- 1/3 c. butter or margarine
- 3 lb. chicken thighs
- 1/4 c. all-purpose flour
- 2 Tbsp. firmly packed brown sugar
- 1 tsp. salt
- 1/2 tsp. ground ginger
- 1/8 tsp. pepper
- 1 c. orange juice
- 1/4 c. water
- 2 oranges, peeled and sliced
- hot cooked rice
- Melt butter in Dutch oven over medium heat, add chicken and brown on all sides.
- Remove chicken from Dutch oven and set aside; reserve drippings in pan. Combine flour and next 4 ingredients and stir into drippings.
- Cook over medium-high heat, stirring constantly, 1 minute.
- Gradually stir in orange juice and water. Bring mixture to a boil; add chicken.
- Cover and simmer 25 minutes.
- Place orange slices on top of chicken.
- Cover and simmer 10 minutes or until chicken is done.
- Serve over rice.
- Yield:
- 4 servings.
