Pasta Primo
- 1 pound farfalle (bowtie)pasta or cheese tortellini
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 pound jumbo shrimp, peeled, deveined and cut into 1/2" pieces
- 1/4 cup sun-dried tomatoes, julienned
- 1 cup half and half
- 1/4 cup vodka
- 1/4 cup fresh basil, julienned
- 1/2 cup Asiago Cheese, shredded
- salt and pepper, to taste
- 1.Cook pasta according to package directions.
- 2.While pasta cooks, in a large saute' pan heat oil and butter. Add garlic and cook just until softened.
- 3.Add the tomatoes and cook briefly.
- 4.Add the shrimp and saute' until pink.
- 5.Add the vodka and salt and pepper. Cook just to heat.
- 6.When the pasta is drained, return it to the large pot it was cooked in and add the shrimp mixture. Place over a low heat and add the half and half. Slowly mix in the Asiago and cook just until melted. Remove from heat, add the basil and cover.Let stand about 5 minutes before serving.
