Pumpkin W/Sage (Zucca E Salvia)

  1. Peel pumpkin and remove all seeds and strings. Cut into finger width slices. Set aside. In a large wide frying pan, over medium heat, melt half the butter. Add onions and saute stirring until translucent, about 10 minutes. Add pumpkin raise heat and cook stirring often until tender, about 20 more minutes. Melt the rest of the butter and fry the sage leaves until crisp, about 2 minutes. At the same time cook tagliatelle or spinach fettuccine until al dente. Pour pumpkin sauce over pasta. Add cheese and pepper. Pour sage and butter sauce. Toss and serve hot. For vegan version substitute margarine for butter and vegan cheese.
