Polish Gingerbread Cake

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Separate egg whites from yolks. Beat whites with salt until peaks form and set aside.
  3. Blend egg yolks with sugar then add honey, hot coffee, oil, and orange juice to mixture.
  4. Sift flour, cocoa, baking powder, baking soda, and Lebkuchen spice. Add dry mixture to wet mixture. Fold beaten egg whites into batter.
  5. Bake at 375 degrees Fahrenheit for 50 minutes in Bundt or round cake pan. After baking and cooling, drizzle melted chocolate over cake.
