Christmas Sweet Rice
- Rice - cheap regular white rice comes in plastic bag, usually Riceland Brand or comparable store brand.
- 3 cups water
- Milk - may mix with evaporated milk
- 2 cups sugar - more if needed
- 1 cup softened raisins - 1 minute cooked in microwave in water
- Cinnamon to sprinkle on at tableside.
- Put water in the bottom of your double boiler to a point that the top pans bottom rests on or in the water without overflowing. Bring to a boil. Put 1 or 1.5 cups of rice with 2 or 3 cups of water. The water should be double the amount of rice you put in. Cook the rice until the water is absorbed. Watch the lower part with the water so it doesnt boil dry or boil over. You may have to add more water. When rice is done, add milk, any kind. Somtimes we mix in the evaporated milk left over from the pumpkin pies, fill the pan to the top. Add 2 cups sugar and stir carefully. Continue to cook slowly and stirring occasionally. Watch so bottom does not stick or turn brown. Taste to see if you need more sugar. Add 1 cup softened raisins. Drain the raisins from the water/microwave & add to the rice before serving. The milk should be cooked down when done. Add cinnamon at the table.
