Chicken Divan Casserole
- *1-2 bunches of fresh broccoli, depending on size of bunch
- *3 whole/6 half chx breasts
- *2 cans cream of chx soup, canned/undiluted
- *1 cup mayo
- *1.5 Tbs lemon juice or 1 fresh-squeezed lemon
- *1.5 tsp curry powder
- *6-8 oz sharp cheddar cheese, grated
- *4-6 slices, firm-textured white bread; remove crusts
- *~half-stick melted butter
- ASSEMBLY:
- -butter a 13" x 9" baking dish
- -layer broccoli, then chx chunks
- -in separate mixing bowl, combine soup, lemon juice, mayo, curry powder > pour over chx and spread to cover
- -spread grated cheese evenly over soup mixture
- -cut bread into 1-inch squares, dip into melted butter in pan, arrange on top of casserole
- -Preheat oven to 350 and bake uncovered for 25-30 mins; until cheese melts, bubbling and bread crumbs are golden brown
- -serve some TASTY casserole (good with Texas Pete)!!!
- -NOTE: Can assemble, refrigerate and bake to serve later. Perfect for dinner parties/potlucks!
