Green Pepper Steak

  1. Cut beef across grain into thin slices.
  2. Combine soy sauce, garlic and ginger; add beef.
  3. Toss and set aside while preparing vegetables.
  4. Heat oil in large frypan.
  5. Add beef and toss over high heat until brown.
  6. If meat is not tender, cover and simmer over low heat for 30 minutes.
  7. Turn heat up and add vegetables.
  8. Toss until vegetables are tender-crisp.
  9. Mix cornstarch and water.
  10. Add to pan; stir and cook until thickened.
  11. Add tomatoes and heat through.
