Beer Can Chicken
- 2 Tbsp each smoked paprika
- salt and onion powder
- 1 tbsp each of cayenne pepper and ground cumin
- 2 tsp each of dried thyme
- oregano
- pepper
- and garlic powder
- 4 lbs chicken washed and drained
- vegetable oil
- 12 oz can of beer.
- Mix together all 9 dry ingredients.
- Preheat grill to medium-high heat.
- Rub down the chicken and it's cavity with the vegetable oil. Season the chicken with rub mixture remember to season the cavity.
- Pour out 1/4 of the beer and sit the chicken on top of the beer can.
- Place the chicken upright in the center of the hot grill and cover.
- Cook the chicken for 1-1.5 hours or until an instant read thermometer registers 165.
- Once cooked, cover loosely with foil and let rest for 10 mins before carving.
