Tortellini With Zucchini In Parmesan Sauce
- 1 10 oz package of fresh cheese tortellini
- 1/2 cup raw pine nuts, cashews, OR walnuts
- 2 Tbsp olive oil
- 1 medium zucchini, halved and sliced
- 6 green onions, sliced diagonally, 1/4 inch thick
- 1/2 cup whole milk
- 1 cup shredded Parmesan cheese
- Salt and black pepper
- 1. Chop nuts, and slice zucchini and green onions
- 2. Boil tortellini until tender and drain
- 3. Meanwhile, heat olive oil in large skillet and add nuts. Cook until lightly toasted, 2 or 3 minutes, and remove with a slotted spoon. Add zucchini and green onion and cook until slightly tender, but firm.
- 4. Add pasta,nuts, *cooked chicken if desired, milk and 3/4 cup of Parmesan cheese to pan. Toss and cook for one minute, being careful that Parmesan cheese does not clump.
- Season with salt and black pepper.
- Transfer to serving bowls and top with remaining Parmesan cheese.
- Serve hot!
