Apple Strudel

  1. In mixer w/ dough hook combine flour nd salt.
  2. In a separate bowl mix oil and egg until combined and add to flour mixture. Add water and mix until dough is soft and elastic. Mix on #1 speed for 5 minutes and on # 2 speed for 10 minutes.
  3. Portion into 900g balls, wrap and refrigerate.
  4. BREADCRUMBS
  5. Toast breadcrumbs in oven. combine w/ other ingredients until well mixed.
  6. Store until ready to use.
  7. Assembly and Baking
  8. Sheet dough to #0
  9. Spread on a tablecloth on a large table and stretch thinly corner to corner
  10. Sprinkle melted butter over entire surface of dough.
  11. Mix the apple, lemon juice, breadcrumbs, cinnamon sugar, chopped walnuts and rum raisins together.
  12. Place the apple mixture on half of the dough and form a log. Place a 2nd log of apple mixture onto the other half of the strudel dough.
  13. Using the tablecloth lift and roll the strudels. Bake at 350F until golden and crisp. Cut into 10 portions and dust w/ confectioner's sugar a serving.
