Apple Strudel
- STRUDEL DOUGH
- 1.1 kg all-purpose flour
- 2 tsp salt
- 220ml vegetable oil
- 1 whole egg
- 500ml warm water
- BREADCRUMBS
- 7oz/ 200g breadcrumbs
- 7oz 200g granulated sugar
- 3.5 oz/100g butter , melted
- 1 tsp vanilla paste
- Assembly
- 900g strudel dough
- 1.1 kg Golden Delicious apples, peeled, cored and sliced
- 20ml lemon juice
- 120gm toasted breadcrumbs
- 1 tsp ground cinnamon
- 40g granulated sugar
- 25g chopped walnuts
- 25 g rum-soaked raisins
- 2 tsp confectioner's sugar
- In mixer w/ dough hook combine flour nd salt.
- In a separate bowl mix oil and egg until combined and add to flour mixture. Add water and mix until dough is soft and elastic. Mix on #1 speed for 5 minutes and on # 2 speed for 10 minutes.
- Portion into 900g balls, wrap and refrigerate.
- BREADCRUMBS
- Toast breadcrumbs in oven. combine w/ other ingredients until well mixed.
- Store until ready to use.
- Assembly and Baking
- Sheet dough to #0
- Spread on a tablecloth on a large table and stretch thinly corner to corner
- Sprinkle melted butter over entire surface of dough.
- Mix the apple, lemon juice, breadcrumbs, cinnamon sugar, chopped walnuts and rum raisins together.
- Place the apple mixture on half of the dough and form a log. Place a 2nd log of apple mixture onto the other half of the strudel dough.
- Using the tablecloth lift and roll the strudels. Bake at 350F until golden and crisp. Cut into 10 portions and dust w/ confectioner's sugar a serving.
