Udon Noodles In Miso Sauce
- 1 pound fresh udon noodles
- 1 sliced onion
- 1-2 cups sliced mushrooms or spinach
- 1T lemon juice
- 2t black sesame seeds
- 4 cloves garlic minced
- 4T ginger minced
- 1-2T sesame oil
- Miso sauce:
- 4T miso paste
- 1/2 cup mirin
- 4T rice vinegar
- 1/2 cup water
- 1.5t curry powder
- Bring salted water to a boil. Add udon noodles and cook until just tender (approx 14 minutes). Drain and rinse under cool water.
- While noodles are cooking, heat 1T oil in a pan and caramelize onions. Add garlic and ginger in last 5 minutes of cooking.
- If using mushrooms, remove onions from pan, add additional 1T oil to pan and brown mushrooms. Add onions to pan.
- Mix miso sauce and add to onion mix. Bring to a bubble. If using spinach add now and just wilt. Add udon noodles, stir to coat. Sprinkle sesame seeds and lemon juice. Stir gently and cook sauce to desired consistency. Serve.
