Lo-Cal Cranberry Jewel Salad

  1. Place cranberry juice cocktail and orange juice in a nonaluminum saucepan.
  2. Sprinkle gelatin over juice mixture.
  3. Let stand 1 minute.
  4. Add honey.
  5. Cook, over low heat, stirring, until gelatin and honey dissolve.
  6. Remove from heat.
  7. Stir in cranberries, celery and mandarin oranges.
  8. Spoon gelatin mixture into a 4-cup mold, coated with cooking spray.
  9. Cover and chill until firm.
  10. Unmold salad onto a lettuce-lined serving platter.
