Lo-Cal Cranberry Jewel Salad
- 1 c. cranberry juice cocktail
- 1/2 c. unsweetened orange juice
- 1 Tbsp. unflavored gelatin
- 1/4 c. honey
- 2 c. fresh or frozen cranberries, thawed and chopped
- 1/2 c. chopped celery
- 1 (10 1/4 oz.) can mandarin oranges, in water (undrained)
- vegetable cooking spray
- curly leaf lettuce leaves
- mandarin orange segments (optional)
- orange rind curl (optional)
- Place cranberry juice cocktail and orange juice in a nonaluminum saucepan.
- Sprinkle gelatin over juice mixture.
- Let stand 1 minute.
- Add honey.
- Cook, over low heat, stirring, until gelatin and honey dissolve.
- Remove from heat.
- Stir in cranberries, celery and mandarin oranges.
- Spoon gelatin mixture into a 4-cup mold, coated with cooking spray.
- Cover and chill until firm.
- Unmold salad onto a lettuce-lined serving platter.
