Country Italian Bean Soup

  1. Cook bacon in large saucepan over medium-high heat, 3 minutes or until crisp; drain.
  2. Add onion; cook 3 minutes or until soft.
  3. Add chicken broth, crushed tomatoes, olives, pepper, beans, and diced tomatoes.
  4. Bring to boil. Reduce heat; simmer, uncovered, 10 minutes.
  5. Add shrimp; cook 3 minutes or until shrimp turn pink. Sprinkle with parmesan cheese, if desired.
