Peanut-Butter & Chocolate Kisses

  1. Preheat oven to 375F (190C). In a medium bowl, beat
  2. together butter, peanut butter, brown sugar,
  3. 1/4 cup granulated sugar, egg, vanilla and salt until light
  4. and fluffy. Add flour and baking soda, beating until
  5. thoroughly blended. Shape dough into 48 balls, using round
  6. teaspoon for each. Roll balls in 3 tablespoons granulated
  7. sugar. Place 2 inches apart on ungreased baking sheets.
  8. Bake 8 to 10 minutes or until light golden. Immediately top
  9. each cookie with a candy kiss, carefully pressing down
  10. firmly. Remove cookies from baking sheets; cool on racks.
