Georgia Peach Cobbler(Serves 8)

  1. Combine peaches, sugar, flour and nutmeg in a Dutch oven; set aside to allow syrup to form for approximately 15 minutes.
  2. Bring peaches to a boil; reduce heat to low and simmer 10 minutes, or until peaches are tender.
  3. Remove from heat and stir in vanilla and margarine.
  4. Roll 1/2 of pastry to 1/8-inch thickness; cut into circle to fit 2-quart baking dish.
  5. Spoon 1/2 of peach mixture into lightly buttered dish.
  6. Top with pastry.
  7. Bake at 475u0b0 for 12 minutes, or until lightly browned.
  8. Spoon remaining peach mixture over baked pastry.
  9. Roll remaining pastry to 1/8-inch thickness and cut into 1-inch strips.
  10. Arrange in lattice design over peaches. Bake additional 15 to 20 minutes.
  11. Allow to cool slightly.
  12. Serve with vanilla ice cream.
  13. Serves 8.
