Kitchen Sink Rice Pilaff
- 3 slices bacon -- cooked and crumbled
- 2 tablespoons vegetable oil
- 1 yellow bell pepper -- diced large
- 1 red bell pepper -- diced large
- 1 onion -- diced large
- 2 cups cooked rice
- 1 cup cooked wild rice
- 10 ounces peas
- 4 tablespoons corn kernels (canned or frozen)
- 1 pinch cayenne pepper
- Pepper and salt -- to taste
- Prepare long grained white or brown rice in chicken stock (preferably home made). Cook bacon until tender, drain and crumble. Heat oil or two tablespoons of the bacon drippings and sautee the onion and bell peppers until the onion is translucent and the peppers begin to soften. Add the rices and stir to heat through. Add the peas and corn and stir to heat through. Add cayenne. Pepper and salt to taste.
