Apricot Glazed Chicken Breasts

  1. Season chicken with salt and pepper and heat oil in a large skillet over medium high heat. When oil is very hot, brown chicken breasts on each side. Once browned, remove them to a plate.
  2. Add the broth, preserves and soy sauce to the pan and bring to a boil stirring with a wire whisk so it is well combined. Boil for at least five minutes.
  3. Return chicken to the pan and baste with the apricot mixture. Reduce heat to medium low and continue cooking and spooning apricot mixture over chicken several times until chicken is no longer pink in the center. This could take up to 20 minutes depending on the thickness of the chicken breasts.
  4. Transfer chicken breasts to a plate and spoon glaze over them and garnish with chopped green onions. Serve with white rice and spoon the glaze over the rice too. Any veggie is good with this dish and the rice is yummy with the sauce.
