Hearty Beef Pasta, Stacey A.
- 1 (28 oz) can Contadina(R) Crushed Tomatoes
- 1 (14.5 oz) can Contadina(R) Petite Diced Tomatoes
- 2 tbsp olive oil
- 1 large sweet Vidalia onion, diced fine
- 3 cloves garlic, minced
- 1 small can of beef broth
- 1/2 tsp pepper & salt (each)
- 1 bag carrots, raw
- 1 1/2 lb stew meat
- 1 tbsp freshly minced oregano
- 1 lb rigatoni pasta
- 1.teat saute pan on med high heat.
- 2.tdd Olive Oil to pan.
- 3.tdd onion and saute over med high heat until onions are translucent.
- 4.tdd garlic, salt and pepper.
- 5.tdd 1 can diced tomatoes and 1 can crushed tomatoes. Saute for 1 minute.
- 6.tdd beef broth and carrots. Turn down heat to med and saute until carrots are cooked to your liking.
- 7.tdd beef and saute until med rare to med. Add 1 tbsp oregano and 1 lb of cooked rigatoni shaped pasta.
- 8.toss together and serve immediately.
