Spicy Black Bean Soup

  1. Heat oil in heavy pot. Then saute onion, garlic and jalapeno till browned. Then add in cumin, chili powder, oregano and pinch salt and stir. Then add the cans of beans and stir. Add bay leaf and simmer. After about 15 minutes soup mash down some of the beans so as to create a thickening. Simmer about 30 minutes total adding more water if needed. Toss in cilantro leaves last 5 minutes of simmering. Remove bay leaves. SErve with a dollop of sour cream and a lime wedge.
